How to choose and store walnuts

When buying walnuts, unpeeled, choose those that can be felt heavy for their size. Shells shall not be punctured or dirty, since it is a sign quite often for mould developing. Peeled walnuts in general are available in pre-packed condition and in bulk. Just as with any other food that you can buy in larger quantities, make sure the container is untouched and that the store has a good product turnover to ensure maximum freshness. If you can smell the nuts, do it to make sure nuts are not rancid. Due to the high content of polyunsaturated fatty acids, walnuts are extremely perishable and care should be exercised in their preservation.

Peeled walnuts should be stored in airtight containers placed in the refrigerator where they will be preserved for six months or in a deep freezer, where they will remain for one year. Walnuts with shells should preferably be stored in a refrigerator, although they may be kept in a cool, dry, dark place and they will stay fresh for six months.
